Start with a legally purchased, clearly labeled, oil-based cannabis product intended for eating, calculate the amount for the entire loaf, blend it into the recipe’s plain oil, and cut the completely cooled loaf into equal portions. For a conservative example, 30 milligrams of labeled THC divided across 12 slices gives an estimated 2.5 milligrams per slice.
That word estimated matters. Label variation, measuring error, mixing, uneven slices, and baking all add uncertainty. This recipe controls what a home cook can control without pretending the kitchen is a lab. Before you bake: choose the right infusion
Use an oil-based cannabis product that:
- Came from a legal, regulated source where you live.
- States THC as mg/mL, mg/teaspoon, or total milligrams and total volume.
- Is labeled for oral use or cooking.
Do not use vape cartridge oil, essential oil, topical oil, or an unlabeled concentrate in food. Those products may contain ingredients that were never meant to be swallowed, and an unlabeled concentrate gives you no defensible dose.
This route is more predictable than starting with flower, but not perfectly precise. A 2015 analysis of 75 edible medical-cannabis products from three U.S. cities found that only 17% met the study’s label-accuracy threshold [Vandrey et al., 2015]. That historical snapshot is not an estimate of today’s entire market, but it supports buying regulated products and leaving a safety margin.

Calculate the loaf dose before measuring the oil
Choose the number of slices and the estimated dose per slice first.
Estimated loaf THC = target THC per slice × number of slices
For the conservative example in this recipe:
2.5 mg per slice × 12 slices = 30 mg labeled THC in the loaf
Next, convert the target loaf dose into a volume of your product.
Infused oil volume = target loaf THC ÷ labeled THC concentration
If your oral oil is labeled 5 mg THC per mL:
30 mg ÷ 5 mg/mL = 6 mL infused oil
This recipe uses 30 mL total oil, so combine 6 mL of the example infusion with 24 mL of plain neutral oil. If the label uses teaspoons, follow that unit. Use a graduated medicine measure, not a kitchen spoon.

If the calculation requires more than 30 mL of infused oil, lower the target dose or choose a suitable, legally available oral product with a clearer concentration. Do not change the recipe’s total oil.

Ingredients
- 360 g bread flour, plus a little for the work surface
- 240 g lukewarm water
- 25 g granulated sugar
- 7 g instant yeast
- 7 g fine salt
- 30 mL total oil: your calculated infused-oil volume plus enough plain neutral oil to reach 30 mL
- Plain oil for lightly greasing one 8½-by-4½-inch loaf pan
Equipment: digital scale, large bowl, whisk, sturdy spoon, graduated medicine measure, and loaf pan. A probe thermometer is optional.
How to make cannabis-infused sandwich bread
1. Make and record the oil blend
Record the product, lot number, concentration, oil volumes, target loaf dose, and slice count. Measure the infusion, add plain oil to reach 30 mL total, and stir the oils together. Do this first so you cannot forget whether the dose was added.
2. Mix the dough
In a large bowl, stir together the bread flour, sugar, yeast, and salt. Add the lukewarm water and all of the prepared oil blend. Stir until no dry flour remains and a rough dough forms.
Knead by hand for 8 to 10 minutes, or with a dough hook on low for 6 to 8 minutes. The dough should be smooth, elastic, and slightly tacky. Too much extra flour makes it dense.
Scrape the bowl so no oil remains at the bottom. Home mixing cannot guarantee pharmaceutical uniformity, but visible oil pockets guarantee worse distribution.
3. Let it rise
Put the dough in a lightly oiled bowl and cover it. Let it rise until roughly doubled, usually 60 to 90 minutes. Follow its size, not only the clock.
4. Shape the loaf
Lightly grease the loaf pan. Press the dough into a rectangle about as wide as the pan. Roll it into a tight log, pinch the seam closed, and place it seam-side down in the pan.
Cover and let it rise until the center crowns about an inch above the rim, usually 35 to 60 minutes. Heat the oven to 350°F (177°C).
5. Bake until the crumb is set
Bake on the center rack for 30 to 35 minutes. The loaf should be deeply golden, sound somewhat hollow when tapped, and release cleanly from the pan. If you use a probe thermometer, a center temperature around 190°F (88°C) is a useful cue for this style of loaf, but color and structure matter too.
An oven set to 350°F does not mean its moist loaf center reaches 350°F. Internal-probe research found a major dough-to-crumb transition around 55–70°C (131–158°F) [Rouillé et al., 2010]. The crust gets hotter and drier than the crumb, so comparing the oven setting with a cannabinoid boiling point cannot calculate the finished dose.
Nor does every labeled milligram necessarily survive. Time, heat, oxygen, formulation, and distribution can matter. Never promise a retention rate without testing the finished food.
6. Cool completely, then portion
Cool the loaf on a rack for at least 2 hours; warm bread is harder to portion evenly. Weigh the cooled loaf, divide its mass by 12, and cut 12 slices close to that target weight.
You can refine the estimate for an odd-size slice:
Estimated THC per gram = estimated loaf THC ÷ cooled loaf weight in grams
Estimated slice THC = slice weight in grams × estimated THC per gram
That arithmetic corrects for slice size. It does not correct product-label error, incomplete mixing, or baking loss.
Label and store it like cannabis, not ordinary bread
Infused bread looks and smells like normal bread. That makes storage a safety issue, not just a freshness choice. Health Canada advises keeping edible cannabis separate from ordinary food, clearly labeled, locked, and out of sight and reach of children and pets. The FDA likewise warns that accidental THC-edible ingestion can cause serious adverse events, especially in children.
As soon as the loaf is sliced:
- Put each slice in its own sealed wrapper or container.
- Mark it CANNABIS-INFUSED — ADULT USE ONLY.
- Add the date, product used, estimated milligrams per slice, and the sentence “Estimate based on product label; home mixing and baking add uncertainty.”
- Put the portions inside a locked container separate from ordinary bread.
- Tell every adult in the household what the container holds.
Freeze any slices you will not use within two days. USDA guidance says microbes become dormant at 0°F (-18°C), though food quality still declines over time. Freezing neither sterilizes food nor makes THC inactive. Thaw one portion at a time.

How to try one slice more safely
Only adults of legal age in a place where cannabis use is lawful should make or consume this bread. Do not serve it at a shared meal, leave it on a counter, or offer it to someone who has not knowingly agreed to consume cannabis.
Oral cannabis is delayed and variable. In a controlled study of infrequent users, brownie effects began after 30 to 60 minutes, peaked around 1.5 to 3 hours, and higher doses caused more impairment [Schlienz et al., 2020]. A related study found effects could last 6 to 8 hours [Vandrey et al., 2017]. Health Canada says full effects may take up to four hours.
That means:
- Start with the planned low portion; do not stack slices because nothing happened quickly.
- Wait the full period recommended by your local public-health guidance before considering more.
- Do not drive, ride a bike in traffic, operate machinery, cook over open flame, supervise children alone, or do safety-sensitive work while impaired.
- Avoid combining cannabis with alcohol or other impairing substances.
- If you take medication, have a health condition, are pregnant or breastfeeding, or have a history of severe reactions, ask a qualified clinician before using cannabis.

Once the base formula works, add up to 2 tablespoons of dry seeds, rosemary, or oats. Wet fillings complicate shaping and consistent portions.

FAQs
Can I just mix ground cannabis into bread dough?
This recipe does not recommend it. Flower creates uncertain activation, extraction, potency, flavor, and distribution. Research the science of decarboxylation, and accept that home potency remains estimated.
Does baking at 350°F destroy all the THC?
Oven air, crust, and moist crumb reach different temperatures over time. Some loss may occur, but the oven setting cannot calculate it. Never add THC to “compensate” for an assumed loss.
Is 2.5 mg THC a safe dose for everyone?
No dose is risk-free or right for everyone. Health Canada uses 2.5 mg THC or less as a low starting amount, but individual response varies with tolerance, physiology, food, medication, and product formulation. Some people should avoid THC entirely. The conservative example is a planning tool, not medical advice.
Can I toast infused bread?
Yes, but toast only the portion you intend to eat and stay beside the toaster. Toasting adds another heating step, so it does not make the dose more certain. Never use an impaired moment to operate a broiler, open flame, or other high-heat appliance.
What if I accidentally made the loaf too strong?
Do not rely on cutting paper-thin slices to rescue an uncertain batch. If the calculation is documented and the loaf was mixed evenly, you can portion it by weight into lower estimated doses. If the input or math is unknown, do not serve it. Dispose of it securely according to local rules so children, pets, and wildlife cannot reach it.
